One Pot Creamy Tomato Spinach Pasta

Servings: 4 to 6 
Total time: 25 to 30 minutes 

“Garlic, onion and Italian seasonings make this quick and easy one-pot pasta full of flavor. Add cooked and crumbled Italian sausage for a hearty, meaty option. 

Ingredients: 

1 Tbsp vegetable oil 

1 small yellow onion, diced 

2 cloves garlic, minced 

15 oz. can tomato sauce 

15 oz. can diced tomatoes (do not drain) 

1 1/2 cups water 

1 tsp Italian seasoning 

1 Tbsp sugar 

1/2 tsp salt 

8 oz. rotini pasta 

2 cups baby spinach 

4 oz. cream cheese 

2 Tbsp grated Parmesan 

Add 1/2 to 1 tsp red pepper flakes for a little heat 

Instructions:

Add the oil to a large skillet over medium heat. Add the onion and garlic and saute 3 to 5 minutes, or until soft and translucent. Stir in the tomato sauce, diced tomatoes, water, Italian seasoning, sugar, salt and pasta; cover with lid and bring to a boil. Boil 10 to 12 minutes, stirring frequently, until the pasta is tender. Add the spinach, cream cheese and Parmesan and stir until well combined. Serve warm.
